CDO Corned Beef and Coleslaw Wrap

Makes 4 servings

Cooking Time 15 - 20 minutes


  • 1 tbsp oil 2 pcs garlic cloves, minced
  • 1 pc small potato, diced
  • 1/2 cup stock
  • 1 tsp fish sauce
  • 1 pinch black pepper, ground
  • 1 pc red onion, sliced in rings
  • 4 pcs flour tortilla
  • For garnish bay leaf

For Coleslaw:

  • 1/2 head cabbage, shredded
  • 1/2 part small carrot, brunoise
  • 1 small pack pineapple tidbits, minced
  • 1 small sachet raisins
  • 1 tsp red onion, minced
  • 1 tbsp mayonnaise
  • To taste salt
  • To taste pepper


  1. In hot pan, heat oil, sauté garlic until it becomes golden brown.
  2. Sauté diced potatoes. Add stock. Add CDO HIGHLANDS CORNED BEEF, season with fish sauce and black pepper. Place onion rings on top. Simmer for about 10 minutes.
  3. For Coleslaw: Mix all ingredients together until a creamy texture is achieved. Season with salt and pepper. Set aside.
  4. To serve: Toast flour tortilla in a preheated oven toaster for 1 minute. Lay tortilla on plate and place 1 full tbsp of corned beef mixture. Top with coleslaw and bay leaf.
