Cheese & Ham Soup with Vegetables & Black Pepper Croutons

Makes 4 - 6

Cooking Time 15 minutes

Ingredients

  • 1 can CDO PREMIUM CHOPPED HAM 380 g, cubed
  • 1 cup DANES CHEESE 180 g, grated
  • 1 cup potato, peeled and diced
  • 1/2 cup carrot, diced
  • 1/2 cup onion, diced
  • 1/2 cup butter, cubed
  • 1/4 cup all – purpose flour
  • 2 cups water
  • 2 cups milk
  • to taste salt
  • to taste white pepper
  • 1/4 cup green peas

   ​For Croutons: 

  • 1 cup sliced bread, diced
  • 1 tbsp oil
  • 1 tbsp freshly cracked black pepper

Procedure

  1. Make croutons: dip bread in oil and sprinkle black pepper. Toast for 10 minutes or until golden brown. Set aside.
  2. Sauté potatoes, carrots and onions in butter for 3 minutes.  Add flour and continue sautéing for another 3 minutes.
  3. Slowly add water and milk, stirring continuously.
  4. Add peas and CDO PREMIUM CHOPPED HAM. Bring to a boil then reduce to a simmer.
  5. Add DANES CHEESE and season with salt and pepper to taste. 6. Top with croutons.
