Thai Tomato Sardines Soup

Makes 4 - 6 servings

Cooking Time 10 minutes

Ingredients

  • 1 bottle SAN MARINO SPANISH SARDINES 240 g, deboned
  • 2 tbsp olive oil
  • 1 cup white onions, chopped
  • 2 tbsp garlic, minced
  • 1 can button mushrooms, sliced
  • 2 pcs 3”  lemongrass stalk, pounded  
  • 1 pc siling labuyo, sliced 
  • 1 can canned crushed tomatoes (200 g)  
  • 1 cup fresh tomatoes, peeled and diced
  • 2/3 cup lime juice
  • 4 cups vegetable stock or water
  • 3 tbsp fish sauce
  • 2 tbsp sugar

Procedure

  1. Sauté onions, garlic, mushrooms and lemon grass for 3-5 minutes or until translucent.
  2. Add siling labuyo, canned tomatoes, fresh tomatoes, lime juice, stock/water, fish sauce and sugar and bring to a boil then reduce to a simmer,  cook for 5 minutes.
  3. Discard lemongrass stalk.
  4. Top with sardines and garnish with basil leaves.
