Corned Beef Quesadilla

Makes 12 servings

Cooking Time 5 minutes

Ingredients

  • 1 can HIGHLANDS CORNED BEEF 180 g
  • 200 g quick melt cheese, grated
  • 12 pcs medium flour tortilla

   For Tomato Salsa:

  • 1/4 cup onion, chopped
  • 1 cup tomato, chopped
  • 1 tsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1/8 cup olive oil
  • to taste salt
  • to taste pepper

Procedure

  1. Make tomato salsa: mix all vegetables in a bowl then add lemon juice and olive oil. Season with salt and pepper to taste.
  2. Sprinkle quick melt cheese on one tortilla. Add HIGHLANDS CORNED BEEF and salsa. Cover with second tortilla.
  3. Pan grill quesadilla until cheese is melted.  
  4. Slice quesadilla into four wedges.
