Beef Burger Benedict

Ingredients

  • 1 pack HIGHLANDS GOLD PREMIUM BEEF PATTIES 452 g
  • 4 pcs fresh eggs
  • 2 pcs English muffins, split in half and toasted
  • 2 pcs egg yolks  
  • 1 tbsp white wine vinegar
  • to taste iodized salt
  • to taste ground white pepper
  • 1/2 cup unsalted butter, melted and kept warm
  • 3 tsp lemon juice
  • 8 pcs asparagus spears, blanched 

Procedure

  1. Grill HIGHLANDS GOLD PREMIUM BEEF PATTIES until cooked through.
  2. Poach eggs. Set aside.
  3. Make sauce: in a blender, combine egg yolks, white wine vinegar and a dash of salt and pepper.
  4. Pulse blender while slowly adding melted warm butter to create a smooth sauce. Adjust seasoning with lemon juice, salt and pepper.
  5. Top each muffin with a burger patty, egg and asparagus.
